This is that AWESOME watermelon salad I had Wednesday at our work 4th of July potluck.  I've seen other ones like this with onions and black olives, but I think those would completely overpower the watermelon.

4 cups cubed seedless watermelon
2 tbsp. olive oil
3 tbsp. lime juice
1 tbsp. red wine vinegar
3/4 cup crumbled feta cheese
1/4 cup chopped fresh mint or Italian parsley

1. Place watermelon cubes in large bowl.
2. Whisk olive oil, lime juice, and vinegar in small bowl and pour over watermelon.  Toss to coat.  Add salt and pepper to taste.
3. Gently stir in feta and mint or parsley.  Serve immediately.


I used a lot more watermelon, a little less feta, and a little more mint (I prefer mint over Italian parsley).

Very tasty and refreshing!  We're eating it with grilled steaks, baked potatoes, and salad for dinner tonight.

I've finally re-re-however-many-times-re-enrolled in bellydancing with Suspira. I've really missed this, and Suspira is great. I swear I'm going to keep up with it this time!

Life is good. Nothing much else to report. Having a boyfriend that regularly leave little treats in my purse before I go to work is awesome. :)

Our new house is awesome.  I love coming home to it everyday after work, and I hate to leave it in the morning.  I think having Steve here might have something to do with that.

Speaking of Steve, he's off on a grand seafaring adventure for a few days.  Just sailing down the coast of Florida from Merritt Island to Miami with some friends of his.  Lucky sea dog!

I'm still with Weight Watchers.  I've lost 9.4 pounds already, and hopefully by my weigh-in tomorrow that tally will be up to 10 pounds lost.  I'm so happy I'm making this work.

We invited Michele and Maddie over for Mother's Day this past Sunday.  Charles was sick, and so was my mom, so I couldn't just leave Michele hanging on her first Mother's Day (yes, I realize it's a completely fabricated "holiday," but moms are important).  She was so tired having to take care of Maddie by herself on Saturday, the day after a very long 8th grade field trip with her students, so I let her take a nap in my bed while I watched Maddie.  It was a wonderful day.  You can see the pictures here.

I kinda feel like playing WoW right now, but I'll probably keep on reading Breaking Dawn.  I've found the Twilight series entertaining, but I really don't understand the hype.  Unless you're a teenage girl.  I mean, I can't relate to any of the characters, and the storyline is rather predictable.  Something about it - the writing, the story, the characters, maybe all three - is a little off, so I can't feel completely connected to it all like I do with other books.  Well, whatever.  They're entertaining.

I hate moving.  Really, really hate it.

I hate the upheaval.  Having torn up deep roots at one beloved location and not yet sunk them firmly at the new location.  I feel like I'm floating and not quite real.  I'm in that in-between stage of being halfway in this apartment and halfway in the new house and everything's a mess of boxes, dust, and cat hair.

This little apartment has been a wonderful haven for me for the past two years.  A place to lick my wounds, rediscover myself, make new friends and loves.  I'm going to miss Elmwood Street and downtown Orlando, and I'll especially miss having my mom a block away.

But when I start feeling crappy about it and want to stop doing anything, I remember what I'm moving on to.  I'll be living with my love in a great house with a yard and a patio.  It's close to work and not all that far away from the people and places I like.  It feels like a place to really live in, not just to stay at.  A place we can build a future in.

So that's my motivation as I sit here trying not to cry from frustration, eyes itching and nose running from all the dust.  Moping and procrastinating will just delay my future.
